PUDINA or The Mint Rice bath – One of the most cooked and the easiest of the recipes is the preparation of pudina rice or the mint rice!! Pudina is a healthy vegetable rich in antioxidants and phyto nutrients and is rich in vitamin C, potassium and calcium which is very much essential to beat acidity and is also good for the muscles of stomach. With these importance, today I would like to pen down the recipe of Pudina rice.

Pudina rice recipe needs  ingredients which we use it regularly and the pudina Leaves. Pudina Rice dish is delicious has a strong aroma and flavor that positively influences the taste of this food.

Method of preparation:-

Ingredients required:

Basmati rice or raw rice – 1 cup
Onion – 1 or 2
Green chilli – 2
Ginger – 1 inch piece for better taste
Mint leaves – 1 medium sized bunch or 1 cup
Fresh lemon juice -1 tbsp
Fresh peas –as per the liking (optional)

Oil – 2 tbsp
Cardamom -1
Cinnamon – 1 inch piece
Cloves – 2

Preparation step : Wash pudina leaves and grind it to a fine paste along with an onion, 1-2 green chilli and a small piece of ginger adding very less water. Grind it well.

Use Soaked Janani basmati, drain and keep it aside.

Cooking step:Sunflower Sunpure Oil should be heated in the pan, add oil, cardamom, cinnamon and cloves mentiones as per the ingredient list. Saute for a few seconds, then add thinly sliced onions and fry it till onions turns pinkish in color.

Add the paste prepared by grinding in mixer and saute till the raw flavor of the mint paste goes. Add a handful of fresh peas now.

Add drained rice, salt needed (for 1 cup rice approximately for taste add 2 tea spoon salt), juice of half a lemon, and little less to 2 cups of water. Transfer it to another container (in case if you have done it in kadai) and pressure cook for 3 whistles and switch off.

If it is done directly in pressure cooker or pan as mentioned on top of the article, pressure cook for 1 whistle and simmer wait for another 5 to 6 minutes. Switch off and open the cooker once the pressure subsides.

This makes the pudina rice ready to serve. It can also be prepared by making both rice and the pudina paste separately and then mixing it as per the requirement. Extra ingredients like potato, paneer etc., can be added as per the liking.

A raitha with this will make it a good combination and also a gives an enhanced taste of raitha with it!
